Winemaking Report:

This year in San Juan province, there was a decrease in the yields of the different varieties due to the appearance of warm winds that influenced the phenological stages of the plant, leading to clusters somewhat lighter in weight than usual. This phenomenon resulted in a higher concentration of aromas, texture, fruit and color in clusters, and showed in the wines produced. Additionally, the sustained high temperatures and the warm and long summer caused industrial ripening to move away from polyphenol ripening. Joint decision-making by the enologist and agronomist team played an essential role to bridge that gap with irrigation. This work was done conscientiously, thus reaching harvest time with the best ripeness.

The grapes were hand-harvested in the early morning, to take advantage of the cool hours and ensure transportation was done at the right temperature. At the winery, they underwent gentle crushing and were subsequently refrigerated to achieve cold maceration, which lasted 72 hours. Alcoholic fermentation took place with select yeasts for 11 days. 70% of the wine was aged for 6 months in 50 % French and 50% American oak.
